Life has been a bit hectic and Martie suffered as result. A bought a small bag of gem squashes and decided to cook them this afternoon. Cut them in halves and removed the pips. Once cooked, I drain the water and let the squash-halves cool down. Then scooped the flesh out of the skins. Added four eggs, some salt, generous dash of paprika, some dried onion flakes and a fair quantity of quinoa flour. I mixed this well, sprayed a pyrex tart dish and scooped the mixed in. Leveled it and grated cheese generously over the top. Stuck it in the oven at about 200 degrees Celcius, for about 30 minutes. Jum!
